Most Sri Bhagyalakshmi Atta is milled from durum wheat - mixture of endosperm and bran, that comprise 90% of the Indian wheat crop and is more precisely called Sri Bhagyalakshmi Durum Atta. The high temperatures attained in a chakki (mill or grinder, traditionally from stone) produced by friction, allows the carotenes present in the bran to give the characteristic roasted smell and the sweetness of the atta.
